Ingredients:
- 1 kg beef cubes (chuck or shin work well)

- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper, to taste
- 2 cups white beans (optional)
Instructions:
1. Heat oil in a large pot over medium heat. Add onions and cook until softened, about 5 minutes.
2. Add garlic and cook for an additional minute.
